about 'The Knife'

The name ‘ The Flying Knife ’ is based on an experience I had as a seventeen year old apprentice in Newcastle,England.
The Head Chef, who insisted on only ever using a klever, had a very volatile temper.
One day in a fit of rage he threw his Klever across the kitchen just as a waiter came through the swinging doors. The waiter believing he had been hit passed out cold smashing a full tray of glasses.
I vividly remember the knife, which had lodged in the wood skirting of the door quivering as the waiter lay passed out amid the smashed glass.

I cannot repeat what was said by the chef but it was the last time he threw his knife!
